Week one- kale

Kale is one of my favorite leafy green vegetables. It's kinda strong in taste, but it's soooo full of vitamins it makes me feel good to be eating something that's so healthy. I like to wash and chop kale and saute it with garlic in the wok.



Sometimes that's enough-- it's great to wilt down and serve next to whatever else you're having for dinner. My favorite thing to do with kale, though, is to add it to some pasta and bacon and onions, and make a brie sauce to go with all of it. The best pasta dish ever!



If you want to try to do it: saute the kale, set it aside. Make a few strips of bacon, remove the bacon, and caramelize an onion in some of the bacon grease (to get rid of some of the grease I usually pour a bit over Henry's dog food). Once the onion is caramelized pour 1 T flour mixed into 1 c milk in the pan and scrape up all the oniony-bacony bits. Add 3 oz. or so of brie (rind removed), stir till creamy. Add in some cooked pasta, add the kale and bacon.
